Olives contain compounds called polyphenols which occur naturally in plants and have been shown to act as antioxidants in the body. Antioxidants neutralize free radicals which cause damage leading to inflammation and illness. Many factors can contribute to free radical damage including: pollution, stress, too much sun exposure, poor diet, smoking, and excessive alcohol consumption. The two main polyphenols in olives are oleacein and oleuropein.
